Classic Eggs Bene
With Culley's Hollandaise Sauce

Ingredients:
- 1 tbsp white vinegar
- 2 eggs
- 1 muffin split
- 2 pieces of smoked salmon
- Culley's Hollandaise Sauce
- Chives, to garnish
- A handful of rocket
Method:
- Bring a large pot of water to the boil. Add the vinegar.
- Stir the water in a circular motion and crack the eggs in. Cook for 3-5 minutes until the white is firm but the yolk is still soft.
- Toast the muffin split.
- Top the muffin with salmon, eggs, hollandaise and chives. Serve with rocket. Season with salt and pepper.
