Classic Eggs Bene

With Culley's Hollandaise Sauce

 

Time: 10 minutes
Servings: 1

 

Ingredients:

  • 1 tbsp white vinegar
  • 2 eggs
  • 1 muffin split
  • 2 pieces of smoked salmon
  • Culley's Hollandaise Sauce
  • Chives, to garnish
  • A handful of rocket

Method:

  1. Bring a large pot of water to the boil. Add the vinegar.
  2. Stir the water in a circular motion and crack the eggs in. Cook for 3-5 minutes until the white is firm but the yolk is still soft. 
  3. Toast the muffin split. 
  4. Top the muffin with salmon, eggs, hollandaise and chives. Serve with rocket. Season with salt and pepper.
