CARIBBEAN INSPIRED CORN AND AVOCADO SALSA

Serves 4 as a side
•Kernels of 1 corn cob
•100g cherry tomatoes, halved or quartered if large
•1 avocado, diced
•Generous handful parsley, chopped
•2 radishes, thinly sliced
•1/4 cup chopped peanuts
•1 tbsp apple cider vinegar
•1 tbsp olive oil
•1 tsp Culleys Tropical Carribbean Sauce
•1/2 tsp cinnamon
•1/4 tsp mustard
•1/4 tsp smoked paprika
•Salt and pepper, to season
1. In a large bowl, combine corn, tomatoes, avocado, parsley, radishes and peanuts.
2. In a smaller bowl, whisk together remaining ingredients to combine.
3. Pour over the salad, and toss to fully combine. Serve chilled!
