CARIBBEAN CORN SALSA

With Culley's No.7 Tropical Caribbean Hot Sauce
Servings: 4 as a side
Time: 10 minutes
Ingredients:
- 1 cup corn, cooked
- 100g cherry tomatoes, halved or quartered if large
- 1 avocado, diced
- A handful of parsley, chopped
- 2 radishes, thinly sliced
- 1/4 cup chopped peanuts
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- 1 tsp Culley's No.7 Tropical Caribbean Sauce
- 1/2 tsp cinnamon
- 1/4 tsp mustard
- 1/4 tsp smoked paprika
- Salt and pepper, to season
Method:
- In a large bowl, combine corn, tomatoes, avocado, parsley, radishes and peanuts.
- In a smaller bowl, whisk together remaining ingredients to combine.
- Pour over the salad, and toss to fully combine. Serve chilled!
