CARIBBEAN CORN SALSA

With Culley's No.7 Tropical Caribbean Hot Sauce

 

Servings: 4 as a side
Time: 10 minutes

 

Ingredients:

  • 1 cup corn, cooked
  • 100g cherry tomatoes, halved or quartered if large
  • 1 avocado, diced
  • A handful of parsley, chopped
  • 2 radishes, thinly sliced
  • 1/4 cup chopped peanuts
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 tsp Culley's No.7 Tropical Caribbean Sauce
  • 1/2 tsp cinnamon
  • 1/4 tsp mustard
  • 1/4 tsp smoked paprika
  • Salt and pepper, to season

Method:

  1. In a large bowl, combine corn, tomatoes, avocado, parsley, radishes and peanuts.
  2. In a smaller bowl, whisk together remaining ingredients to combine.
  3. Pour over the salad, and toss to fully combine. Serve chilled!
