SPICED KUMARA & GREEN CHILE TACOS

Makes 6 tacos

 

•75g kumara

•1 large clove garlic

•1 tsp ground cumin

•1 tsp ground coriander

•1/4 tsp ground black pepper

•1/4 tsp salt

•1/2 can diced tomatoes

•2 tbsp water

•1/2 tsp Culley's No.3 Verde Green Chile Sauce

•6 taco shells

•handful lettuce leaves

•condiments, herbs and seasonings of choice, to serve

 

1. In a large frying pan, heat a little oil over medium-high heat. Add kumara and cook for 5 minutes.

2. Add garlic, cumin, coriander, pepper and salt, and continue to cook, stirring, for another five minutes.

3. Add tomatoes and water, and cover with a lid. Reduce heat and simmer for 10 minutes.

4. To assemble tacos, place a few lettuce leaves in each taco shell. Top with kumara mixture, then serve topped with condiments, herbs and seasonings of your choice. Add an additional drizzle of Culley's No.3 Verde Green Chilli Sauce if desired!
