Whipped Feta Toast
With Culley's Hollandaise Sauce

Ingredients:
- 50g feta
- 2 tbsp greek yoghurt
- 1/2 tsp fresh garlic, minced
- 1 tsp lemon juice
- 2 eggs
- 2 slices of sourdough toast
- 1 radish
- Dill
- Chilli flakes
- Culley's Hollandaise Sauce
Method:
- With a whisk or beater, mix feta, yoghurt, garlic and lemon juice until smooth. Season to taste with salt and pepper.
- Bring a pot of water to the boil and boil eggs for 6-10 minutes, depending on your liking. Drain the pot and cover the eggs with cold water before peeling and cutting them into quarters.
- Toast the sourdough to your liking.
- Thinly slice the radish and cut the eggs into quarters.
- Spread the feta onto the toast, top with eggs, radish, dill, chilli flakes and Culley's Hollandaise Sauce. Seasoning with salt and pepper.
