Whipped Feta Toast

Whipped Feta Toast
With Culley's Hollandaise Sauce

Time: 10 minutes
Servings: 1

 

Ingredients: 

  • 50g feta
  • 2 tbsp greek yoghurt
  • 1/2 tsp fresh garlic, minced
  • 1 tsp lemon juice
  • 2 eggs
  • 2 slices of sourdough toast
  • 1 radish
  • Dill
  • Chilli flakes 
  • Culley's Hollandaise Sauce

Method: 

  1. With a whisk or beater, mix feta, yoghurt, garlic and lemon juice until smooth. Season to taste with salt and pepper. 
  2. Bring a pot of water to the boil and boil eggs for 6-10 minutes, depending on your liking. Drain the pot and cover the eggs with cold water before peeling and cutting them into quarters. 
  3. Toast the sourdough to your liking. 
  4. Thinly slice the radish and cut the eggs into quarters. 
  5. Spread the feta onto the toast, top with eggs, radish, dill, chilli flakes and Culley's Hollandaise Sauce. Seasoning with salt and pepper.
