Street Corn Loaded Fries

With Culley's No.10 Carolina Reaper Hot Sauce

Ingredients:

  • 2 medium orange kūmara, cut into fries
  • Olive oil
  • 1 tbsp butter
  • 2 cups frozen corn kernels
  • 2 tbsp mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp lime juice
  • 1/2 tbsp Culley’s No.10 Carolina Reaper Hot Sauce
  • 1/2 tsp ground cumin
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp coriander

Method:

  1. Preheat the oven to 180˚C and line a baking tray with baking paper.
  2. Place the kūmara fries on the baking tray spaced apart. Drizzle with some olive oil and season with salt and pepper. Bake for 30-35 minutes or until cooked through and slightly crispy.
  3. Heat the butter in frying pan over a medium heat. Add the corn kernels and cook for 5-6 minutes then remove from the heat. Stir through the mayonnaise, sour cream, lime juice, Culley's No.10 Carolina Reaper Hot Sauce and cumin.
  4. Serve on the kūmara fries and top with the feta cheese and coriander.
