Pickled Red Onions

Prep time: 5 minutes
Pickling time: 1 hour
Ingredients:
- 1 red onion

½ cup white vinegar
- ½ cup water

1 tbsp sugar
- 1 tsp salt
Method:

Thinly slice the red onion.
- In a pot over a medium heat, combine vinegar, water, sugar and salt and bring to a gentle simmer, until the sugar and salt have dissolved. Allow to cool.

Place the red onion into a jar or container and pour over the pickling liquid.
- Put the lid on and place in the fridge for at least an hour.
