Mexican Corn Ribs
With Culley's Picklenaise and Culley's Mexikai Anything Mexican Spice Mix

Servings: 4-8
Ingredients:
- 4 corn cobs
- 2 tbsp oil
- 1/2 packet of Culley's Mexikai Anything Mexican Spice Mix
- 1 tomato
- 1/2 red onion
- Handful of coriander
- Culley's Picklenaise
- 1 lime
Method:
- Preheat the oven to 200 °C and line a baking tray.
- Cut the hard end off the corn. Stand the cob on its end and carefully cut down the middle. Lay each half down flat on a chopping board and cut down the middle lengthwise.
- Drizzle over oil and sprinkle over Culley's Mexikai Anything Mexican Spice Mix. Toss to coat.
- Bake in the oven for 20-25 minutes, until curled and golden.
- Meanwhile, chop tomatoes, red onion and coriander and mix together.
- Once the corn is cooked, top with salsa and serve with a side of Culley's Picklenaise and fresh lime.
